Delish Gourmet Rolled Ice Cream, which opened its permanent Fredericton location in 2017, is opening a second location in uptown Saint John on 120 Prince William Street.
“We’re currently working on the space…the beginning of May is where we’re shooting for and right now, that’s what it looks like,” said owner Alex Gallant.
Gallant originally got into the ice cream business when he was accepted to study medicine in the Caribbean. He and his wife started up a rolled ice cream truck – he’d first seen the frozen treat on a trip to Thailand – to raise money for medical school and soon business was booming.
They decided to transition from the truck to opening a permanent Fredericton location, rather than uproot their lives and two children and move to the Caribbean.

Gallant says they are very local-oriented and had always planned to expand to Saint John when they opened the initial shop.
“It’s got that old-time charm but it’s current and modern at the same time. We saw that uptown Saint John has been growing the past few years and realized it would be a great spot,” he said.
“Plus, we get a lot of business in our Fredericton location from people from Saint John and we have heard everyone say, ‘Oh, you got to come to Saint John, you got to come to Saint John!”
For now, Delish has no immediate plans to open more locations, but will “see how things go” in the future.
